And speaking of really good things…I meant to share a recipe with you last week before Thanksgiving. For our Turkey Day, my mom's family rotates the hosting responsibilities among the family. The Host(ess) does the Turkey and we all bring our"signature/assigned" dish. It's easy and best of all, we've perfected the feast over the years. My signature dish is a Squash Casserole. Now, before you say bleech….I'll let you in on a little secret…this is probably almost like pumpkin pie but disguised as a vegetable dish! I made a 9×13 pan this year and it was almost all cleaned up. You probably won't have leftovers! Enjoy, it's a great way to eat your veggies.
Squash Casserole
Cream together:
- 1/3 c. butter
- 3/4 c. sugar
Add to mixture
- 2 eggs
- 1 can (5oz) evaporated milk
- 1 tsp vanilla
- 6-8 c. cooked squash
Add Casserole ingredients together and bake at 350 degrees for 45 minutes or until firm. Add Topping 5-10 minutes prior to end of baking.
Topping:
- 1/2 c Rice Krispies
- 1/4 c. brown sugar
- 1/4 c. pecans (or walnuts)
- 2 T. butter – melted
